They fall from the sky randomly at night and emit a golden light so you can see where they are. They do disappear in the morning (at 5:00 am game time), so that would explain where it went. They can spawn anywhere, not just in Hyrule Field. Star Fragments are used to upgrade some armour (and sell for 300 rupees) so they're worth grabbing if you can reach them in time!
